In the culinary arts, capers are a condiment, usually pickled, and are commonly used in a number of Italian recipes such as chicken piccata, veal piccata and pasta puttanesca. Cooking with capers is a matter of balancing their tangy, briny, pickly flavour against some sort of smooth, buttery or velvety flavours and textures. These capers range from 6/7mm to 14mm caliber.
