Artichokes have important nutritional values - since ancient times they have been recognised to benefit liver function as well as significant antioxidant and anti-cholesterol properties, alongside its richness in minerals such as iron and some B vitamins. These whole artichokes can be served as an appetiser, in a salad or roasted in the oven.
