Description & Tasting Notes This unique cheese is matured according the ancient tradition of pit maturation. Cheeses are packed into small pits in the ground, known as fossa, which are lined with straw and ferns then sealed over once the cheeses are inside. As the cheeses mature in this unique environment, they develop an amazingly rich flavour and deep toffee colour. Infossato has a strong flavour with a sweet/savoury piccante bite and hints of herbs. The texture is open and crumbly – but not as dry as it appears. Casa Madaio are artisan cheese-makers and affineurs. Their cheeses are aged in caves located in the National Park of Cilento and Vallo of Diano, and have been used by the family to mature cheese for 4 generations.Other Notes & Serving Suggestions Infossato pairs well with artisan lagers and slightly fruity, full-bodied red wines such as Super Tuscans (Sangiovese/Cabernet Sauvignon blends) and Nero d’Avola. Serve on a cheese platter accompanied with truffle honey or balsamic figs and Italian crispbread.
