Matured for an extended period of 36 moths, this Parmigiano Reggiano from Cantarelli has an intense yet still elegant flavour: sweet and savoury with a pronounced bite and small amino acid crystals throughout the interior. It also has an amazing texture – crumbly and flaky, but still incredibly moist – the result of aging in the family’s naturally ventilated cheese caves, used since the 1800’s for maturing Parmigiano Reggiano.Other Notes & Serving Suggestions Parmigiano Reggiano is best known as a cooking cheese, but this 36 month version is also delicious to eat on its own – serve a chunk with pre-dinner drinks, it is a great match with sparkling wines, craft beers and single malt whisky. You can of course use it grated into sauces and on top of baked dishes such as gratins, or shave into salads. Use the rind to flavour soups, stocks and olive oils – don’t let a gram go to waste.
