Reduce heat to Medium and simmer uncovered for 20 minutes, stirring occasionally. Be careful not to overcook. Recipe Variations: Tortilla Lime Chicken Roll-Ups In a large pot place 2 lbs cooked, shredded chicken. In another pot, boil 4 cups of water and whisk in dry soup mix, 1 – 6oz can of tomato paste, 1/2 tsp hot sauce and 1/4 cup fresh lime juice. Simmer for 20 minutes, stirring often. Set aside to cool. Ladle cooled soup mixtureinto blender and puree. Pour into pot of shredded chicken. Repeat puree with remaining 1/2 of cooked soup mixture. Cover, stir and heat. Serve with corn tortillas.
