Rolled Wheat is traditionally cleaned wheat, that has been steamed and rolled into flat flakes under heavy rollers. Prime Australian wheat is a natural grain sourced from growers who have declared their crops to be free of genetically modified organisms. It is traditionally used by breweries somewhere between 5% and 10% of the grist for body, head retention and enhanced mouthfeel in any beer – also to supplement wort nitrogen. This is an unmalted product, so will require to be mashed with base malts to achieve conversion.
