ROLLED OATS FROM DEHULLED OAT GROATS, STEAMED AND ROLLEDRolled Oats are traditionally dehulled oat groats, that have been steamed to denature the enzymes and rolled into flat flakes under heavy rollers. Prime milling oats are a natural grain sourced from growers who have declared their crops to be free of genetically modified organisms. Rolled oats are unmalted and need to be mashed with base malts. The starch that unmalted oats contain will remain unusable to yeast unless enzymes can start breaking them down – therefore we normally run these through the mill with the rest of the grains to increase surface area and exposure to enzymes positively impacting mash efficiency. Studies have shown that oat starch is a little more difficult to access than more common brewing grains and the increased surface area may help with this issue.
